No-fuss Easy carrot coleslaw recipe. Just a few ingredients and takes a few minutes to complete. Perfect as a dairy-free, vegan side to dinner or lunch.

This salad will store in the fridge for up to 3 days.


I serve it often with fish or meats to bring freshness to the meal.


If you wanna change this easy carrot coleslaw recipe, add coriander instead of parsley and replace olive oil with sesame oil. It will make it taste more Asian.

    • 3 carrots
    • 1 small red onion
    • half a lemon
    • half an apple
    • few parsley leaves
    • salt, pepper & olive oil


  1. If using non-organic carrots, peel first.
  2. Grate carrots, onion and half an apple.
  3. Add all the ingredients to the bowl, add salt, pepper to taste and dash of olive oil
  4. Squeeze the lemon juice
  5. Chop parsley leaves and add to the rest of the ingredients.
  6. Mix well together.
  7. Serve and enjoy!
